I recall having the same problem. I found that leaning the sail/mast
slightly to the outside of the turn kept me moving past the straight
downwind direction.

I am trying to learn how to perform a carve jibe and
seem to have hit a plateau. I sail a Bic Veloce 278
(sails: 4.7, 5.4, 6.0). My problem is that when I can't
turn further than true down wind. --I'll run out of gas,
stall and then fall in.
While I'm sure that there is fine tuning to be done on
my approach and turn, I feel fairly comfortable with the
set up, moving the back foot to the opposite rail and
turning the board (at least until true down wind).
However, I can't figure out how to get beyond stalling
at true down wind.
I would be curious to know what to do to complete a
carving jibe [assuming I can maintain the speed] or go
to plan "B" and do a pivot jibe [long board jibe] when
I'm not planning.
